Recipe Food Prep

Food for your body. Quick food prep! I enjoy this salad because it is very versatile and can be varied in several ways--add meat protein, vegan protein, tomato varieties and different healthy oils. I marinate my garlic in olive oil for when I want to add a different flavor to this easy quick recipe. I'm a veggie fanatic! English cucumber and red onion are always welcome to eat in my house, plus AVOCADO! (breathing heavy) LOVE LOVE LOVE IT! :-)
Try it out make a big or small batch it's up to you and post your taste variety on IG or FB!
Cucumber Tomato Avocado Salad
1 English Cucumber cubed (skin on or off)
2 avocados cubed
1 pint of cherry tomatoes sliced in halves
1/2 small red onion sliced
3 Tablespoons of lime juice
1/4 cup olive oil, avocado oil, grapeseed oil (whichever you like)
1 Tablespoon of raw honey or maple syrup (I use lavender flavored honey)
2 cloves of garlic minced
1/2 teaspoon of salt (to your taste, I personally use Kosher salt or Himalayan salt)
1/4 cup cilantro chopped finely
What to do: Mix all dressing ingredients in a separate bowl with a wisk. Chop all other ingredients, mix and toss with dressing.
